December 30, 2011- Pizza Rounds

Pizza Rounds

Today was a busy day so we changed our menu plans. We originally wanted to do a mushroom sauce over rice. Instead we did mushroom pizza rounds. We started with the biscuit bread and then added sauteed mushrooms. Then we covered them with pizza sauce and mozzarella cheese.

We also made an ice cream cake. It had an oreo bottom, with ice cream sandwiches around the edges. Then we layered three different ice creams, mint chocolate chip, chocolate, and cookies n' creme. On the top we put cool whip. Then we let it solidify in the freezer. I reccomend that you line your spring form pan with some wax or parchment paper so that it all slides out easily. Enjoy with a side of Big Bang Theory. :)

December 28, 2011- Stuffed Tomatoes

Stuffed Tomatoes

This is a dish Nick and I have been making for a while. We like to buy big tomatoes that are good for stuffing. The filling is rather simple. We make rice, and chop carrots and mushrooms. You sautee the mushrooms and carrots in olive oil and then cook them with some soy sauce and italian seasoning. You then add in the rice and cook it together. I put some cheese in the bottom of the tomatoes and then add the filling. Then you put cheese on the top and bake it for about 25 minutes. It is a really yummy dish and we again had help from my brother Acusio which was fun! :)

Well tonight we are having two different kinds of pizza so we have lots of pizza left over. My mom really likes when we make this mushrooms and cheese pizza and we like to make it for her so we decided to have it tonight. Tonight we had a special helper in the kitchen, my brother, Acusio. It was fun watching him and Nick cook. I got a little but of a break (only had to grate parmesan). If you want the directions for the Cheese and Mushroom Pizza you can look at December 11, 2011. December 26, 2011- Peanut Butter and Jelly...BLACKOUT!

Peanut Butter and Jelly

Well the reason is because around 5:00pm there was a power outage. And it lasted until after 8pm. We were supposed to have Christmas with my Mom and family and didn't get to start that until about 8:30. We had lots of candles lit and just sat around talking. I worked on a puzzle by candlelight. But we got hungry and decided to just make peanut butter and jelly to eat for dinner. It was easy and didn't require any electricity. So that is that. Christmas was fun with mom and family :) Traveling was also not too bad, it didn't take us very long to get here and we even stopped in LA for over an hour to visit with my dad. Hope everyone had a great Monday after Christmas!

December 25, 2011- Leftovers

Leftovers

Well this is a late post. Merry Christmas everyone! We didn't really eat dinner tonight. We were so full from Christmas lunch that we didn't have room to eat any dinner. For lunch we had: a carrot her spread with water crackers and french bread baguette, homemade mozzarella sticks with marinara sauce, homemade butternut squash soup with bread sticks, baked macaroni, salad, there were meatballs for everyone else but obviously we didn't eat them. For dessert there was a homemade chocolate cream pie, this dessert Joanie made which was pumpkin puree mixed with vanilla pudding, whipped cream, and cinnamon graham crackers (you layer them and it's like a pumpkin pie). Nick and I also brought over our peppermint chocolate scones. There were also some cookies. It was definitely a yummy day. And we were so full and busy packing that we didn't even eat dinner. Hope everyone had a wonderful day with family and friends! :)

December 24, 2011- Noodle Bake

Noodle Bake

This is our Christmas Eve tradition Nick and I have established. It is also a family tradition meal in my (Becca's) family. Although Nick and I have altered the recipe a bit. It is a really yummy noodle dish that consists of layering noodles and making a mixture of cream cheese and sour cream and putting that in the middle. You use a marinara sauce on the bottom and I put it on top of the cream cheese/sour cream mixture to make sure the bake is extra saucy. You put noodles on the top, sauce over the noodles, and sprinkle cheddar cheese on top. The original recipe calls for ground beef and green onions. We obviously don't use the ground beef and Nick doesn't like green onions. It is a really delicious bake that we love eating.




































We also made some scones to bring over for Christmas tomorrow at Nick's parent's house. They are peppermint chocolate scones. They have peppermint extract and chocolate chips on the inside as well as a chocolate drizzle and crushed candy canes on top. We hope everyone likes them!

Warm and Nutty Cinnamon Quinoa (Vegan)

We tried this recipe for the first time when we went vegan for Lent. It is actually a breakfast quinoa dish but it is so good that we decided to have it for dinner tonight. So you cook the quinoa in a milk/soy milk mixture. But to make it vegan you just cook it in 2 cups of soy milk. It is 1 cup of quinoa. You then add some cinnamon into it. You can add whatever berries or nuts you like. We also eat it with some agave. We like to eat it with strawberries and pecans. We are also having the quinoa with a honeycrisp apple and a banana with some peanut butter. Yummy! This is a super easy and protein packed vegan dinner that is also breakfast. Can you ask for anything more? Enjoy!

December 22, 2011- Leek and Sweet Potato Gratin

Leek and Sweet Potato Gratin

This is a recipe from Vegetarian Times magazine. It is a gratin which we seem to be eating a lot of variations of lately. This one really only has leeks and sweet poatoes in it. You sautee the leeks with garlic and rosemary. Then you layer the sweet poatoes and the leeks in a few layers. You bake it covered for about 35 minutes. You then sprinkle it with a mixture of parmesan cheese and bread crumbs and drizzle some olive oil on top and bake uncovered for 15 minutes. We ate it with some of the bread that one of Nick's students made for him for Christmas. It is a simple dish to make but takes some time in the oven. We actually didn't have any bread crumbs so ours just had parmesan on top. It was still really good. Have a good night!

We were supposed to make Polenta with 2 Sauces but we had such a busy day that we got home late and we still had two pieces of pizza left from Patxis that we decided to just have some leftover pizza. Nick also received a gift from a student which was homemade bread and some homemade apricot jam. So we also had that. It was such a random dinner but it was good :)

December 20, 2011- Sushi (Vegan)

Sushi (Vegan)

Tonight we made homemade sushi for dinner. On the inside we typically include soy sauce marinated and baked tofu, cucumbers (but we forgot to buy them this time), avocado, and carrots. We have a special sushi rice we buy and then the nori sheets. We also bought sushi rollers to make rolling the sushi easier. It is fun to make sushi but can get a little tedious. It is really yummy since I grew up eating sushi and have really missed it. We really enjoy making and eating sushi. It is easy to make and yummy. We serve it with some low sodium soy sauce. One time when we made sushi I also made homemade miso soup which was good (no fish paste of course). But we did not do that this time. The sushi was enough to fill us up. Enjoy!

December 18, 2011 - Mexican Pizza Pie

So I decided to come up with a new recipe. I wanted to replicate a healthier version of the taco bell's mexican pizza. Becca and I decided to give it a try. We layered mini corn tortillas on the bottom of a pie pan. Then we added a layer of beans and enchilada sauce with a little cheese. We then put more tortillas and repeated the beans and sauce. We topped it with a final tortilla layer and sauce. Cheddar cheese was added to the top. We cooked it on 350 for 20 minutes. After it cooled a little, we served it with guac, sour cream, and diced tomatoes. YUM!

December 17, 2011- Patxi's Mushroom and Cheese Pan Pizza

We had a very busy day today working on Christmas presents and cookies. We decided to try the new pizza joint in Campbell. Patxi's is a Chicago style pizza place. We love cheese and mushroom pizza and we will try it out.



















We also decided to make cookies for St. Chris. We have a great cake mix cookie recipe that makes a ton of cookies. You make them with any variety of cake mix, add one cup of butter, 2 Ener-G egg replacer, and then 1.5 cups of any chip (chocolate, peanut butter, mint). Then they bake for about 13 minutes. One box make somewhere between 55 and 65 cookies, depending on how small you make them. In total we made 265 cookies today :)

December 17, 2011- Tomato Mozzarella Packets

This is a dinner that comes from Vegetarian Times magazine. We have to make the polenta ahead to make sure it is firm for when it goes into the oven. We decided not to make it in foil packets and instead make it in ramekins and other glass dishes to save some foil. We did cover all the glass dishes with foil to make sure it was still covered to replicate the packet process. So you cut up the polenta, we did cubes. You then use fresh tomatoes that are diced. You drizzle olive oil, balsamic vinegar, sprinkle some herbs and some mozzarella cheese on the top. It is a really yummy and can be a simpler meal if you buy already made polenta from the store. But I think making homemade polenta is much more delicious.

This was a quick but tasty dinner. We started by cutting the tofu into thin slices. We bake that for 10 minutes on one side and then flip it over and bake it for 5 more minutes. Then we cover each piece with some BBQ sauce and bake it for 5 more minutes. We served this with some sweet potato fries from TJ's. These we baked for about 10 minutes then flipped and baked for 10 more. YUM!

December 15, 2011- Cannellini al Gratin with Crescent Rolls

Cannellini al Gratin with Crescent Rolls

This is a recipe from our Vegetarian Times magazine. It is cooked in a Dutch Oven and tastes delicious. I would call this comfort food as well. It is a simple recipe but takes some time to cook in the oven. it is onions and carrots sauteed with garlic. You also add two cans of cannellini beans. There is some white wine and vegetable broth. The only seasoning is thyme. You combine parmesan and bread crumbs and sprinkle it on top with some olive oil. It bakes covered for 25 minutes then uncovered for 15 then it has to cool for about 15 minutes. We also have them with crescent rolls. It is a really delicious meal.

December 14, 2011- Brown Rice and Beans with Cheese

Brown Rice and Beans with Cheese

This is one of our favorite meals to make in the crock pot. It is really simple and doesn't require a lot of ingredients. It is brown rice, black beans, celery, cream of celery, vegetable stock, salt and pepper, and onion. You brown the onion and celery and add in the rice and salt and pepper and transfer everything to the crock pot. We typically only cook it for the directions for High so it doesn't burn. It says High for 4 hours, we found that about 3 and a half hours works best. We squeeze some it lime on top and top it with some cheddar cheese and also eat it with some flax seed tortilla chips. It is really a yummy and hearty meal.

Creamy Mushroom and Spinach Pasta

This is a recipe I think we might have tried before but I don't remember. You sautee the mushrooms with some olive oil. We had some whole wheat penne as our pasta. You add some vegetable broth, lemon, and dried oregano to cook with the mushrooms. Then you add the spinach and some cream cheese. You then toss the pasta with some remaining pasta water and serve it. It was a pretty quick dinner (less than 30 minutes). It was also really good. You could taste the cheese, oregano, as well as the lemon flavor. The spinach and mushrooms were also good and the whole penne is a healthier option compared to normal pasta. Enjoy!

We were supposed to make cream of zucchini soup tonight but we realized we had leftovers to eat so we ate those instead. We had leftover lasagna that Nick made on Tuesday and the leftover polenta I made for class on Tuesday. It was a yummy dinner. We also made a salad which had kidney beans, peas, some cheddar cheese, and the ranch dressing we described in an earlier post.

December 11, 2011- Cheese and Mushroom Pizza

Cheese and Mushroom Pizza

This is a really yummy homemade pizza that we love to make. We buy a whole wheat pizza dough in the bag from Trader Joe's (the kind you have to roll out). They used to sell a pizza sauce on the shelves but have been out for a while. They have this other sauce in the refrigerator section and we have been using that. We then buy their shredded 2% mozzarella. We buy some white or cremini mushrooms. We always sautee the mushrooms in some olive oil and garlic for a little bit first. You bake the pizza crust for about 5 minutes first and then put everything on top and finishing baking it for about 6-7 minutes more and it is done! Yummyness! We already ate half the pizza...

December 12, 2011- Cream of Zucchini Soup

This is our first time trying this soup today. Nick made it so it was extra special :) We were inspired to try this soup because we had some cream of zucchini soup with kale at Fresh Choice. This soup is a little different because it has rice in it. It is a rice and onion soup base. You can use water or broth or milk or a combination. Since Nick is lactose intolerant we did a sort of combination of milk and broth. The zucchini soup has zucchini and sour cream. The zucchini base is blended in batches to make it smooth. And then you mix it all together. We actually had the soup with the sour cream served on top which was good. We served the soup with some Parmiaggo rosemary rolls from Trader Joes. Yum!

December 9, 2011- Sweet Poato Patties with Applesauce (Vegan)

This is a new recipe we are trying tonight. It is really simple to try. The recipe calls for more ingredients but we are substituting some things. It calls for eggs, feta, sweet potatoes, flour, mint, melted butter. Obviously we are not including the feta and egg. You can substitute some Earth Balance or margarine for the butter to make it vegan. We put applesauce in it to hold the mixture together better. You fry them in some canola oil for a little bit then bake them for longer. They remind me a little of latkes so we are going to eat them with applesauce. Voile!

December 8, 2011- Pancakes

We were supposed to go to K's Crepes again but they close at 3pm on Thursday, bummer. So we decided I would go and pick up some crepes for Nick and I to have at his school. I have been really sick all this week and was feeling particularly bad today (yesterday, sorry have been slacking on posting) so Nick decided to just make some pancakes for us for dinner. It is the buttermilk just add water ones from Target. Easy peasy. We add some special ingredients to the batter and serve it with some butter, syrup, and a little bit of whipped cream. Yum yum! This is a really yummy recipe that is really easy to make. It is red beans (kidney beans) sauteed with onion and garlic. You mix in some bbq sauce and serve it over quinoa. The quinoa is a whole grain which tastes a little nuttier than rice but also has added nutritional value in that it is a complete protein so we get lots of protein from the kidney beans and the quinoa. This is a really tastey dinner because of the sauteed onions and garlic with the added flavor of the bbq sauce. It is simple and easy and delicious. Enjoy!

December 6, 2011- Lasagna

So since I had class tonight Nick was in charge of dinner. All that I put on the menu was "Lasagna." So that left Nick up to decide to include whatever he wanted. I bought fresh cremini mushrooms and ricotta cheese as well as some mozzarella and parmesan. The rest was up to him. Well he decided to include spinach, carrots, and haricots verts (long, thing green beans) as well as the creminis I bought in our lasagna. It was in a smaller brownie pan and had several layers. The tomato basil sauce we use from Trader Joe's was delicious and I know he added some other seasonings to the sauce as well. It was really yummy. I love coming home to a home cooked meal prepared by my husband :)

December 5, 2011 - One Pot Taco Soup

Hey everyone, we make a awesome soup today. Becca started it in the crock pot. She chopped onion, added frozen roasted corn, a can of diced tomatoes, and pinto beans to the crock pot. We also added veggie stock to the pot. Then mix in a packet of taco seasoning, and ranch dressing. We let this simmer on low for about 3 hours then on high for the last hour. We served the soup with lime, cheddar cheese, and sour cream. We have some awesome flax seed chips that we also had with it.

December 4, 2011- Lentil Shepherd's Pie (Vegan)

Lentil Shepherd's Pie (Vegan)

This is a yummy dish that we make in the crock pot. It is a take on traditional shepherd's pie but had lentils with other veggies. It has lentils, carrots, celery, tomatoes, and onion. On top there is a mixture of regular russet potatoes and sweet potatoes. The normal recipe calls for cheddar cheese but to make it vegan we just don't put any cheddar cheese on it. It all goes in the crock pot on high for about 3-4 hours. Which on a Sunday is good. I don't remember what the setting for low is. It is a delicious and hearty dish that has a good amount of protein and flavor.

Also, when we made pie in Orange County I had one pie dough left from the pumpkin pie. So I decided that I wanted to use the pie dough up and I wanted to make a pie that didn't require a pie dough on top. So I made an apple crumble pie today. It has a caramel sauce that was drizzled on top of the mound of apples that we had to slice. It looks absolutely delicious and we can't wait to eat it! :)













December 3, 2011- Thai Pepper

So we were actually supposed to use our Groupon for K's Crepes in Cupertino but the restaurant was closed due to an event they were having so we were really bummed. We had planned to go to dinner with Nick's parents to discuss all the housing stuff we are dealing with right now. If you don't know, Nick's parents are helping us with a down payment so we can buy a townhouse or condo. So we have been viewing some properties and recently got an agent involved and spent more than 3 hours looking at properties yesterday and it was a really long day. So the crepe place was closed. And our Groupon expires on the 9th so we have to use it by Friday. Ahh! So we decided to walk across the street to Thai Pepper. Now I have been going to Thai Pepper since I was a freshman at SCU. Fond memories of pad Thai there. Nick and I always order the pad Thai (no egg, no fish sauce) and sticky rice. It was yummy comfort food. I think that pad Thai could actually be considered vegan. Not sure though. But it was yummy to say the least. No picture because we ate out...although Nick said he was going to take a picture at the crepe place. Oh well. It was delicious :) We decided we will use our Groupon for K's Crepes on Thursday, talk about waiting until the last minute!

December 2, 2011 - Zucchini Cakes with Corn (Vegan)

This is actually last nights dinner. We ate rather late, 9:00. We were out running errands and doing some Christmas shopping. Dinner was delicious though. When we got home I started dinner and Becca made a salad. Technically this is not part of dinner and it was rather spastic :) We combined peas, kidney beans, 3 cheese mix, lettuce, and this amazing ranch dressing (cheese and dressing were not vegan, but it technically was more of an appetizer and does not count for dinner, but I wanted to include it). We devoured it in a few minutes and never got a picture, oops. We normally have healthy salads with olive oil and balsamic vinegar, so we splurged tonight. So dinner starts with some chopped onion, shredded zucchini, break crumbs, flax seed, and some tartar sauce. You mix it all together in a large bowl and then shape into small patties. Then you fry them in some canola oil, for about 5 minutes on each side. We also had some corn on the cob. We just let this cook in some boiling water. After, peanut got to eat some corn off the cob too. :)

November 30, 2011- Tofu Parmigiana Over Pasta

Tofu Parmigiana Over Pasta

This is a really yummy dinner. It is tofu that is breaded and fried for a little bit then baked with marinara and mozzarella like chicken parmigiana would be and served over spaghetti. It doesn't taste exactly like chicken parmigiana but it is close enough. It is really quite delicious and easy enough to make. We had it with a simple salad with olive oil and a raspberry and black pepper balsamic vinegar that we purchased in Paso Robles. Unfortunately because it was such a busy and stressful day we forgot to take a picture of dinner...boo. What is the point of a blog if you forget the pictures? I'm sorry...Tomorrow is a repeat too so the picture will be boring. Friday's dinner will be exciting and yummy though! But for now it has been a...well...not the best November I have had to say the least. It has probably been the most stressful November of my life. So here is to a better December, if that is possible. Here is to finishing the semester and getting some peace in life. Because as John Lennon says, and in memory of the 10th anniversary of George's death, a new year is almost here, let's hope it's a good one, without any fear. Yes please, I am hoping it is a much better 2012, or at least a better December. Anyway...Goodnight.

This is a simple but yummy recipe. We bought a pre-made mix of veggies which included mushrooms, red and green peppers, onions, water chestnuts, baby corn, broccoli, carrots, snap peas, and bamboo shoots. Because I had class late tonight Nick cooked. Nick sauteed it with some olive oil to start and then added some soy sauce. We had it over brown rice. It is a simple yet delicious recipe! You can use any veggies you want in a stir fry of course and you don't have to use a pre-made package but it makes it convenient.

November 28, 2011- More Leftovers!

More Leftovers!

Tonight we will finish the Thanksgiving leftovers. We have some mashed potatoes, creamed corn, stuffing, sweet potatoes, and pumpkin lasagna left. Hopefully we will finish everything and then start making dinner again. It has been fun not cooking the past few days but we look forward to eating some fresh food. November 27, 2011- Leftovers

So we had sooo many leftovers from Thanksgiving #2 that we had to bring a cooler back! We ended up having leftovers for lunch and then saved some of the pumpkin lasagna which we had for dinner. Because there was so much stuffing we had a little cup of that which we shared for dinner. It was yummy. I don't have a picture of this but you can see the pumpkin lasagna from November 25th post. We also had a small piece of pecan pie for dessert.

November 26, 2011- In N Out

In N Out- Grilled Cheese!!!!

Well today was a travel day. And sorry the post is delayed. We left around 4pm to head back up north and we decided to stop at In N Out in Kettlemen City. We both had a grilled cheese. Nick orders his plain (just cheese and the bun) and I order mine with no tomatoes and no onions, add pickles and ketchup. It was delish. I have been ordering my grilled cheese like this for quite some time. That's all we ordered though because we were eating other snacks in the car. No pictures though...Sorry.

November 24, 2011- Thanksgiving #1-Becca's Dad

Thanksgiving #1- Becca's Dad

So Thanksgiving is being split into two this year. Thursday is with my dad and Friday with my mom. We had dinner with my dad and we went to a restaurant in Malibu called Gladstones. We used to go to this restaurant all the time growing up. They serve mostly seafood here but Nick and I were able to find/customize some things on the menu for ourselves. We ordered a vegetable flat bread that has portobellos, spinach, tomatoes, and marinara sauce. We also ordered the shrimp scampi minus the shrimp. It has some spinach, asparagus, and tomatoes in it as well. The sauce was so delicious, it was like a buttery garlic white wine sauce. We had a side salad to start. It was a really nice meal to share with my dad and brother. We all ordered pasta so clearly even on Thanksgiving we are all still Italian at our roots :) Unfortunately, I have no picture to post for today. I did make a homemade apple pie and pumpkin pie to bring over and share with all of us. They turned out well! Will post the pictures of those on tomorrow's post.

November 23, 2011- Cornish Pasties

Cornish Pasties

This recipe comes from Vegetarian Times magazine. It is originated from Cornwall, a Celtic region in Ireland. It is a pastry dough with a vegetable filling. I have reworked the recipe a little because it includes mustard and egg and we don't cook with eggs and don't like mustard. But regardless, this recipe is delicious! It is traditionally an Irish appetizer but if you have two or three it makes a good dinner. Bon Appetit!

November 22, 2011-Grilled Cheese and Tomato Soup

Grilled Cheese and Tomato Soup

So we made it to Orange County and we ate a little late so we just decided to make grilled cheese and tomato soup. Unfortunately it was devoured and we have no picture! The soup was Campbell's tomato soup and the cheese was Lucerne sharp cheddar. I think the bread was a buttermilk bread. Oh it's good to be home :)

Tonight is a busy night and as a result we needed something quick and easy so this is a simple dinner. It is flatbread bought from Trader Joe's with some simple pizza sauce (also bought) and some cheese. You broil it for a few minutes and voila you have dinner!

November 20, 2011- Vegetable Pot Pie (Vegan)

Vegetable Pot Pies (Vegan)

This is a new recipe that we are trying tonight from the magazine Vegetarian Times. I love this magazine and get a lot of recipes to try and end up loving. Tonight we are trying this one. It is individuals pot pies in ramekins. The veggies in the pot pies are: carrots, onions, sweet potatoes (called for regular but we had sweet potatoes), mushrooms, celery, corn, peas, and asparagus. We made a homemade dough to put on top (it was super easy). I'm sure they will be delicious! :) This recipe is also vegan! Yay!

November 19, 2011- Soy Sauce Marinated Tofu with Roasted Asparagus

So at least every week we try to have 3 or 4 vegan meals a week. Some weeks are better than others. I think last week was not as good of a week, maybe only two vegan meals. This dinner is a classic for us. You just put some soy sauce on the tofu and put it in the oven for about 20-25 minutes. The asparagus is just tossed with some olive oil and a little salt and pepper and roasted for 25-30 minutes and voila! Dinner! We also had some leftover focaccia so we had that on the side.

Tips for tofu: we always buy extra firm and it is important to press the tofu between two plates wrapped in some paper towels, with weight on top for about 15-20 minutes. This gets a lot of the extra water out of the tofu and makes it more absorbent for your marinades.
