Mexican Black Bean Pizza
Tonight we has a Mexican black bean pizza. It was really simple to make. You just purée some black beans, garlic, salsa and cumin and use that on top of the pizza dough and then sprinkle with cheese and bake. We buy the while wheat pizza dough from trader joes and we had some roasted red pepper salsa we made from our Easter get together so we used that. We topped it with lime and some sour cream and it was really yummy and simple to make!
I have decided that due to my passion for cooking, and Nick's handy prep skills, I wanted to start a blog about food. We are both vegetarians some people have misconceptions about what we eat. We eat a lot of really delicious food that I think others would enjoy eating as well. I will try to post a picture of the meal as well a description. If you like it, I will post the recipe. December 14, 2011- Brown Rice and Beans with Cheese
Brown Rice and Beans with Cheese
This is one of our favorite meals to make in the crock pot. It is really simple and doesn't require a lot of ingredients. It is brown rice, black beans, celery, cream of celery, vegetable stock, salt and pepper, and onion. You brown the onion and celery and add in the rice and salt and pepper and transfer everything to the crock pot. We typically only cook it for the directions for High so it doesn't burn. It says High for 4 hours, we found that about 3 and a half hours works best. We squeeze some it lime on top and top it with some cheddar cheese and also eat it with some flax seed tortilla chips. It is really a yummy and hearty meal.
