Orange Marinated Tofu Skewers- Vegan
This was what we had scheduled the day we went to Aqui's. It is a recipe
from our Meat Free Monday's cookbook. The marinade is orange juice,
orange zest, olive oil, and some herbs. We used zucchini, mushrooms, and
peppers as the veggies and then tofu. We marinated it for a few hours
and made skewers and baked them. We served this with Israeli couscous
that we cooked in coconut milk which was really creamy tasting.
