Roasted Carrot Soup- Vegan

Tonight we are having a roasted carrot soup which is vegan because I didn't saute the onions in butter like it said to. You have to roast the carrots first for about an hour to make sure they are nice and caramelized and roasted. Then you saute some onion and add celery and add the carrots and and some vegetable broth. I added some salt and pepper as well as oregano, thyme, and rosemary. You allow it to boil for a while and then puree the mixture in multiple batches. We are having the soup with one of our favorite little baguettes from Trader Joe's.











Peanut Butter Chocolate Pie for Dessert! One of Nick's students from last year gave him a jar of creamy JIF peanut butter for his birthday so we decided to put it to use and make a peanut butter chocolate pie. We will see how it tastes, it looks delicious :)

December 14, 2011- Brown Rice and Beans with Cheese

Brown Rice and Beans with Cheese

This is one of our favorite meals to make in the crock pot. It is really simple and doesn't require a lot of ingredients. It is brown rice, black beans, celery, cream of celery, vegetable stock, salt and pepper, and onion. You brown the onion and celery and add in the rice and salt and pepper and transfer everything to the crock pot. We typically only cook it for the directions for High so it doesn't burn. It says High for 4 hours, we found that about 3 and a half hours works best. We squeeze some it lime on top and top it with some cheddar cheese and also eat it with some flax seed tortilla chips. It is really a yummy and hearty meal.
