We tried this recipe for the first time when we went vegan for Lent. It is actually a breakfast quinoa dish but it is so good that we decided to have it for dinner tonight. So you cook the quinoa in a milk/soy milk mixture. But to make it vegan you just cook it in 2 cups of soy milk. It is 1 cup of quinoa. You then add some cinnamon into it. You can add whatever berries or nuts you like. We also eat it with some agave. We like to eat it with strawberries and pecans. We are also having the quinoa with a honeycrisp apple and a banana with some peanut butter. Yummy! This is a super easy and protein packed vegan dinner that is also breakfast.
