Polenta with 2 Sauces
This is one of our favorite ways to have polenta. I won't get into the whole way we make it. We have made this since starting the blog so you can go back to January 8, 2012 for our previous entry on this dinner. It is always a favorite around here though. :) Bon apetit!
I have decided that due to my passion for cooking, and Nick's handy prep skills, I wanted to start a blog about food. We are both vegetarians some people have misconceptions about what we eat. We eat a lot of really delicious food that I think others would enjoy eating as well. I will try to post a picture of the meal as well a description. If you like it, I will post the recipe. April 28, 2012- Lentil Shepherd's Pie- Vegan
Lentil Shepherd's Pie- Vegan
Tonight we had lentil shepherd's pie for dinner. This is a dinner in the crock pot. The base is made up of onions, carrots, celery, tomatoes, and lentils with some herbs and salt and pepper. The topping is a mixture of russet and sweet potatoes. We were in such a rush to finish Battlestar Galactica last night that we forgot to take a picture (nerds). Oh well. It was still yummy. It is also a vegan dish. You can top it off with cheddar cheese but we left it off.

Tonight we had a dinner that was inspired by a dinner my mom (little b) used to make growing up. She would make a cheeseburger (without the bun) and we would have some mac and cheese on the side. So we decided to make black bean veggie burgers and have mac and cheese with it. It was yummy and nostalgic :)

This is a new meal we tried tonight. It is a really simple meal to make and is something Nick could take to class. You have to make a sweet potato spread to put on lavash bread with some shredded carrots and sliced roasted red pepper. The sweet potato spread consists of baking some sweet potatoes, mashing them and combining it with some garlic hummus, maple syrup, cayenne pepper, salt an pepper, olive oil, and apple cider vinegar. This would be a good appetizer for a party. It is also vegan.

Tonight we had one of our favorite meals for dinner. We make veggie kabobs which has marinated tofu in teriyaki sauce, mushrooms and zucchini. We bake them in the oven. April 23, 2012- Mushroom and Cheese Pizza
Mushroom and Cheese Pizza
Tonight we made a homemade mushroom and cheese pizza. We have made this before and posted about it. I don't remember which day though. Instead of using the wheat crust that we usually buy from trader joes we got the garlic and herb crust and it was really yummy. I had class at 6 so it needed to be a quick dinner before I left and it was. We always enjoy eating this.

Tonight we are having portobello pasta bowls. You roast the portobellos and tomatoes. You then cook some spinach linguine. You use the tomatoes and chop them up with some olive oil, lemon juice, and oregano and this serves as the sauce. You then use a portobello mushroom as the bowl place some pasta in top and top it off with some of the tomato sauce. It is also a vegan recipe but you could easily top it off with some parmesan cheese. We are having it without cheese. Enjoy!

We breaded and cooking in oil some slices of tofu. We baked them in some spaghetti sauce and cheese. It was served over a bed of spaghetti. We also ate some Costco veggie balls.

This is another repeat. We baked baby carrots, onion, and some olive oil and herbs. After it was cooked completely we blended it until smooth in the food processor. We served it with sliced cucumber and pita bread.

We shredded potatoes and mixes it with some diced onion and flour I make the pizza dough. We baked that for a little while then added tomatoes, mushrooms, zucchini, yellow squash, and yellow pepper. We topped it with cheese then baked it a little longer.

We babysat Mia and Riley so Mike and Joanie could go see a movie. We took the kids to Roundtable and got a half cheese and half mushroom pizza. Yum!

We cooked the potatoes in the microwave and then let them cool a little bit. We halved the potatoes and then removed the insides. We mixed that with sour cream, cream cheese, and cheddar cheese. We then refilled the potato and baked them in the oven.

April 12, 2012- Chickpea and Potato Curry over Rice- Vegan
Chickpea and Potato Curry over Rice- Vegan
This is a new recipe we tried tonight. It was a simple recipe and didn't exactly taste like curry but it was still good. It was chopped onion with chickpeas and potatoes. The spices were cumin, coriander, and chili powder. You cook all of them together and lastly add some fresh lemon juice. You then serve it over rice. The hint of lemon was really nice. Overall this was a yummy and simple vegan meal that I'm sure we will try it again.

Tonight we has a Mexican black bean pizza. It was really simple to make. You just purée some black beans, garlic, salsa and cumin and use that on top of the pizza dough and then sprinkle with cheese and bake. We buy the while wheat pizza dough from trader joes and we had some roasted red pepper salsa we made from our Easter get together so we used that. We topped it with lime and some sour cream and it was really yummy and simple to make!

Tonight we are trying a new recipe with these vegetable pancakes. They didn't turn out the greatest because they didn't really want to stay together. The pancakes consist of grated zucchini, grated carrots, corn, and onion as the veggies with the other things to hold it together. They are seasoned with salt and pepper and dill. We decide to have some butternut squash soup in the side.

April 8, 2012- Leftovers

Today we had our Easter family get together at Nick's parent's house. We had a lot of different and food and as a result have lots of leftovers. So tonight we are having leftovers for dinner. We aren't actually that hungry but we will manage to have a little to eat for dinner.

April 7, 2012- Arroz Cubana- Vegan

This is a recipe that Nick grew up eating. It was something that his grandmother made and then his mom. So we had some egg roll a couple of weeks ago and he remembered that he would have these egg rolls called arroz cubana so he wanted us to make them. Well we had some eggs rolls left over and we decided to make it. The filling is made up of garbanzo means, potato, onions, garlic, tomato sauce, some water, and salt and pepper. We also made some rice to have with the egg rolls. The original recipe calls for beef and raisins. Since we are veg there is no meat and I have strong dislike to raisins so we omitted those. We didn't have a lot of egg roll wrappers so we had some egg rolls and the rest of the filling over rice on the side. Half way through dinner we remembered to take a picture so here is our version of arroz cubana!
Oh we also went to the Sharks game tonight :) Go Sharks!

Tonight we are having a roasted carrot soup which is vegan because I didn't saute the onions in butter like it said to. You have to roast the carrots first for about an hour to make sure they are nice and caramelized and roasted. Then you saute some onion and add celery and add the carrots and and some vegetable broth. I added some salt and pepper as well as oregano, thyme, and rosemary. You allow it to boil for a while and then puree the mixture in multiple batches. We are having the soup with one of our favorite little baguettes from Trader Joe's.

Peanut Butter Chocolate Pie for Dessert! One of Nick's students from last year gave him a jar of creamy JIF peanut butter for his birthday so we decided to put it to use and make a peanut butter chocolate pie. We will see how it tastes, it looks delicious :)
