This is a recipe that Nick grew up eating. It was something that his grandmother made and then his mom. So we had some egg roll a couple of weeks ago and he remembered that he would have these egg rolls called arroz cubana so he wanted us to make them. Well we had some eggs rolls left over and we decided to make it. The filling is made up of garbanzo means, potato, onions, garlic, tomato sauce, some water, and salt and pepper. We also made some rice to have with the egg rolls. The original recipe calls for beef and raisins. Since we are veg there is no meat and I have strong dislike to raisins so we omitted those. We didn't have a lot of egg roll wrappers so we had some egg rolls and the rest of the filling over rice on the side. Half way through dinner we remembered to take a picture so here is our version of arroz cubana!
Oh we also went to the Sharks game tonight :) Go Sharks!
