Veggie Kabobs W/ Couscous & Fingerling Potatoes- Vegan

Tonight we had one of our favorite meals for dinner. We make veggie kabobs which has marinated tofu in teriyaki sauce, mushrooms and zucchini. We bake them in the oven. We also make some couscous and steam some fingerling or new potatoes. It is a pretty simple and delicious meal to make. It is also vegan.
