Portobello Pasta Bowls- Vegan

Tonight we are having portobello pasta bowls. You roast the portobellos and tomatoes. You then cook some spinach linguine. You use the tomatoes and chop them up with some olive oil, lemon juice, and oregano and this serves as the sauce. You then use a portobello mushroom as the bowl place some pasta in top and top it off with some of the tomato sauce. It is also a vegan recipe but you could easily top it off with some parmesan cheese. We are having it without cheese. Enjoy!
