Chickpea Broccoli Burgers- Vegan
These are a delicious veggie burger that we have been making for years. They are really tasty and simple to make. To make them you combine broccoli, sauteed onions, chickpeas, and couscous in a food processor. The onions are flavored with cumin so you get a nice flavor. You then form patties and bake them for about 45-50 minutes. We serve them with hummus and flatbread. We forgot to take a picture but we eat these pretty regularly so we should be able to take a picture when we have them again.
I have decided that due to my passion for cooking, and Nick's handy prep skills, I wanted to start a blog about food. We are both vegetarians some people have misconceptions about what we eat. We eat a lot of really delicious food that I think others would enjoy eating as well. I will try to post a picture of the meal as well a description. If you like it, I will post the recipe. May 13, 2012- Riagtoni with Cheese
Riagtoni with Cheese
This is one of our favorite pasta dishes to make. It is originally a crock pot meal but we decided to start making it in the oven. You combine cooked (al dente) rigatoni pasta with a can of cream of mushroom and some cheddar cheese. You also add in salt, pepper, and oregano. You top it with a mixture of bread crumbs and parmesan. You drizzle melted butter and bake covered for about 15 minutes and uncovered for about 10-15 minutes until browned. It is so delicious. Again, we forgot to take a picture, but we have this one every other month or so. It is soooo good. :)

May 12, 2012- Oh Exams...
I had my comprehensive exams in theory and methods today and so I went out to celebrate with my friends who also took them. We went to Flames, a restaurant and bar and we got a bunch of appetizers: sweet potato fries, garlic fries, asparagus fries, and spinach and artichoke dip...and plenty of alcohol. Too much actually. But anyway!
Nick had some kung pao Trader Joes dinner...let's just forget about this night. I actually didn't remember most of it anyway :) haha

We were supposed to have some roasted quinoa with potatoes and cheese but I had been so stressed out studying I didn't have time to go grocery shopping. We didn't have cheese and onions so instead we had these frozen tofu edamame nuggets which are really good (from Trader Joe's) and we had those for dinner with some roasted potatoes instead. It was still a good meal, and vegan!

Earlier in the week when we were planning the menu together, Nick said that he really wanted to make some saucy veggie casserole. I said okay honey you go for it! And he did. He literally put vegetables and tomato basil sauce in a casserole dish and baked it. The end product was pretty delicious. We had edamame, corn, peppers, broccoli, carrots, green beans, and cauliflower. Pretty nutritious and easy to make I will say. And also vegan!

Nick had class tonight and I was going to meet with friends to study for our exams on Saturday so we made croissant sandwiches. We don't really like mayo so we use avocado and spread it on the croissant and then used colby jack cheese. We added shredded carrots and sliced almonds. It was a pretty good sandwich. We also took some veggie chips. Yum!

This is one of our favorite types of veggie burgers to eat. They are inspired by falafels but don't necessary taste like falafels. They taste lemony and have a kick due to some cayenne pepper we add to the mix. We serve them in pita with some hummus and cucumber. It is a quick dinner to make and is also vegan.

This is a delicious marinade for tofu. It is a sauce that consists of orange juice, apple cider vinegar, maple syrup, garlic, rosemary, lemon juice, and soy sauce. We let the tofu marinade over night to make sure both sides are coated well. We then bake the tofu for about 15 minutes or so. We served it with roasted brussel sprouts that were drizzled with olive oil and sprinkled with salt, pepper, thyme, and oregano. This meal was vegan.

One of our Vegetarian Times has a great section on gratins and we love the cannellini gratin and we also love this leek and sweet potato gratin. You sautee the leeks until they are cooked and layer sweet potatoes and leeks. You then drizzle vegetable broth and bake for about 30 minutes covered. You then sprinkle bread crumbs and parmesan and drizzle with olive oil. You bake uncovered for about 15 more minutes. You then have to let it sit for a little bit, about 15 more minutes. We had this with some crescent rolls.

Linguine with Asparagus and Lemon
One of Nick's favorite pastas is linguine with asparagus and lemon. He always gets really excited when it is on the menu. You blanch the asparagus for a few minutes and add it to a sauce that is made out of olive oil, some butter, lemon juice, lemon zest, tarragon, and oregano. You cook the asparagus until it is tender. You then cook the linguine and add the linguine directly into the lemon sauce. You roast cashews in a pan on the stove and add the cashews. We sprinkle a little mozzarella on top of our individual plates and voila! It is really a delicious combination of flavors with the lemon, and tarragon, and asparagus with the mozzarella and cashews.

May 4, 2012- Little B's Birthday!! P.F. Changs
Today was my birthday. I am officially in my mid-twenties. Since we went out for Nick's birthday we decided to out for my birthday. We really enjoy going to P.F. Changs, so we went there. We ordered the vegetarian lettuce wraps as an appetizer and we split the orange tofu as an entree with our own sides of rice. As a dessert they gave me a little serving of the great wall of chocolate which I split with Nick. I know we both got drinks, I think got some type of mojito, I don't actually remember what I got. Oh well. It was a fun night and a special day :)

Today was Nick's dad's birthday so we had Nick's parents over for dinner to celebrate. He requested stuffed shells for dinner so that is what we made. I also made a caramel apple tart for dinner. I stayed home from work to get work done on my papers for thankfully I had enough time to make the tart! I still had to go to class though. But dinner was nice, Nick made the shells all by himself and he had never made them before. I think he did a great job. I believe we have a picture of shells on here from before. Yes from January 4, 2012.

Nick had class so we needed something easy to have for dinner. Last summer we came up with the idea to make pizza on the flatbread that trader joe's sells. So we put pizza sauce and cheese and then broil the flatbreads. It is really easy to make. So this is what we had for dinner tonight. Easy peasy!

May 1, 2012- Brown Rice and Beans with Cheese
Brown Rice and Beans with Cheese
This is a meal in the crockpot that we love to make. It is really simple and quite tasty. You saute onion and celery and mix together brown rice, a can of cream of celery, vegetable broth, black beans, and the onion and celery mix. You let it cook for a while (3-4) hours on high in the crockpot and it is done. We serve it with lime and some cheddar cheese. We also it some flax seed tortilla chips from trader joes. Yum!

One Pot Taco Soup with Cornbread
I really like making this soup because it is really simple, it's in one pot! You just throw a bunch of ingredients together and let them cook. I actually put it in the crockpot and let it cook for a while. It is pinto beans, corn, tomatoes, vegetable broth, seasonings for ranch dip and also taco seasoning. We also made some corn bread and I made a maple butter. It was really yummy.
